Using fonts with TeX was once a Jedi fight. Since (2013 /2015 ?), and LuaTeX development.
NOWADAYS, IT'S A PIECE OF CAKE.

You have to define "definefontfallback"

I just have realised that \definefont requires fontname of font not identifier neither familyname.
